Wash the leeks properly and trim off the base and the bulk of the green tops. Cut into halves longways then into 1.5-centimeter slices. Transfer in a large skillet and submerge with water, then heat over a medium flame for about 20 minutes or until cooked through.

Remove the water from the softened leeks and place in a mixing bowl with the minced beef, eggs, breadcrumbs, dill, flat-leaf parsley and spice and spice generously with pepper and salt. When using raw spinach, clean it carefully, removing any hard stems, and roughly chop it into large chunks. Put in a big pot with a little water over a moderate heat. Once softened, strain in a strainer for about 15 mins, then squeeze out any excess liquid and set aside.

If using previously frozen spinach, thoroughly press out excess liquid.

Warm the olive oil in a pan over a medium heat and saute the onion and garlic until tender, about 4 minutes. Take off the stove.

Combine the wilted spinach, fried onion and garlic, hard cheese, soft cheese, spice, red spice, breading and beaten eggs in a large bowl and spice with seasoning. Combine completely until combined. If the dough appears too wet, incorporate some more breading.

With your fingers, form the mixture into elongated patties a bit bigger than a nut but more compact than an chicken egg, and put them on a plate covered with wax paper. Seal and cool for at least one hour.

In a wide pan over moderate heat, warm oil to a level of about half an inch. Cook the fritters a few at a time for 2–3 minutes on both sides, turning so they are crispy all over, then transfer on absorbent paper.

Offer with lemon slices.
